Allrecipes ~ Shipwreck Casserole

This Shipwreck of a recipe came to me via an e-mail from Allrecipes. I'm not a big fan of e-mails, but I tend to enjoy the ones that have recipes. Not because I will try every single recipe sent to me, don't have the time or money, but I do like eating vicariously through the pictures. Every now and then a recipe that suits my taste, needs and budget comes along. The Shipwreck Casserole was that very one!

I tried it. It was quick, simple and very affordable. It had all my dinner needs in one pot which facilitated an easy clean up. Best of all, after eating it, I can say it was quite delicious and filling. I have not tried it out on kids, but it seems like something they would really like, veggies and all.

This is a great, easy to make and easy to customize recipe. It starts with a couple of inexpensive, convenient boxes of Mac & Cheese (or you can make the Mac & Cheese from scratch if you prefer).

Once you have the Mac & Cheese  base ready you add the veggies. You can mix and match veggies that you and your family like! Whether frozen mixed veggies or fresh garden treats, they will all work well in this dish.

There are lots of add in choices like: diced broccoli, diced and roasted zucchini and yellow squash when in season, chopped spinach, onions, string beans, peas and drained diced tomatoes to name a few. You can add varying amounts of each to suit your taste. I add them all, in varying amounts, depending on availability. Kick up the flavor by adding your favorite cheese: American, Extra Sharp Cheddar, Graded Parmesan, Pepper Jack, Gouda, Feta - whatever your family likes will work well in this dish. 

Shipwreck is a great "go-to" meal on a busy day because it is fast to make. It offers cleverly disguised vegetables for picky eaters. It is satisfying with or without a meat on the side or pairs well with plant based meats. It is convenient because you can work with what you have available in your cupboard, freezer or in the garden. Best of all it is a one pot recipe making clean-up a breeze.

Stove top or baked, this easy to make, highly customizable recipe will become a popular standard in your monthly recipe line up. It is at my house. We love it... the Inn patrons love it too! Let me know what you think.

Allrecipes ~ Shipwreck Casserole

Ingredients

  • 1 pound lean ground beef

  • 1 (7.25 ounce) package macaroni and cheese mix

  • 1 (14.5 ounce) can diced tomatoes

  • 1 cup milk

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 teaspoon seasoned salt or to taste

  • 1 cup shredded Cheddar cheese, divided

Original recipe (1X) yields 4 serving

Directions

Step 1:

Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.

Step 2:

Stir pasta and cheese mixture from macaroni and cheese package into beef. Stir in tomatoes, milk, peas, and corn; bring to a boil, reduce heat to medium-low, cover, and simmer until noodles are tender, about 12 minutes.

Step 3:

Season with seasoned salt. Stir 1/2 of the Cheddar cheese into dish to melt. Top with remaining cheese
